There are plenty of colorful electrolyte drinks out there, but most are loaded with sugar, artificial colors, and ingredients that can leave you feeling sluggish on a hot summer day.
This healthy natural electrolyte mocktail is a little different.
Instead of sports drinks or artificially colored mixers, this mocktail gets its vibrant red and blue layers from real strawberries, wild blueberries, and blue spirulina. Coconut water adds natural electrolytes, while Celtic sea salt adds trace minerals, making it a refreshing option for hot weather celebrations.

Add the frozen strawberries and ¾ cup coconut water to a blender and blend until smooth.
Once blended, divide between two glasses. - Make the White Layer
Fill each glass with ice and add the coconut water until the glass is about two-thirds full.
- Make the Blue Layer
Add blueberries, coconut water, and blue spirulina to the blender and blend until smooth. Add to the top of each glass.
- Serve
Add a tiny pinch of Celtic sea salt if desired. Lightly swirl with a straw. Serve immediately.
TIP: If you want to keep the layers separate, very slowly pour the blue mixture over the back of a spoon against the wall of the cup and do not swirl. This helps the blue layer float on top instead of mixing into the coconut water layer.

Make-Ahead Tip
Both the strawberry layer and blueberry layer can be blended up to 24 hours ahead and stored separately in the refrigerator. Give each mixture a quick stir before serving, as natural fruit separation is normal. This makes it an easy option for Fourth of July parties and summer gatherings.
Serve it extra cold and fun.
For a more festive twist, try using flavored ice cubes instead of regular ice. I share how to make them in my guide on how to make flavored ice cubes, which is perfect for adding extra flavor without watering down your mocktail.

Trish’s Tips
- Use frozen fruit for the best flavor and texture: Frozen strawberries and blueberries help create a colder, more refreshing drink without watering it down.
- Chill your ingredients beforehand: Cold coconut water and frozen fruit help keep the drink refreshing and prevent the ice from melting too quickly.
- Adjust the sweetness to taste: Depending on your fruit and coconut water, you may prefer to add a little honey, maple syrup, or your favorite sweetener.
- Use clear glasses for the best presentation: The vibrant red and blue colors are part of what makes this drink so fun for summer parties and Fourth of July celebrations.
- Don’t skip the pinch of sea salt: A tiny pinch of Celtic sea salt can help enhance the fruit flavors and balance the sweetness without making the drink taste salty. It also contains trace minerals such as magnesium, potassium, and calcium.
- Make it your own: Try garnishing with fresh berries, mint leaves, lime slices, or a festive paper straw for an extra-special presentation.

Frequently Asked Questions
This healthy mocktail uses real fruit, coconut water, and natural coloring from blue spirulina instead of artificial syrups and food dyes.
Coconut water naturally contains potassium, magnesium, sodium, and other electrolytes that help support hydration.
Blue spirulina has a very mild flavor and is mainly used for its vibrant natural color.
Absolutely. This fruity mocktail is alcohol-free and made with simple ingredients that both kids and adults can enjoy.
This usually happens when one or more layers are too thin or too warm. If a layer is watery, it will sink through the others instead of sitting on top. Temperature differences also cause layers to break and blend together. If you want to make layers, make sure all of your layers are chilled and pour each layer slowly over the back of a spoon, and let it gently slide down the inside of the glass. Pouring directly into the center will break through the layer underneath.
