Healthy Strawberry Blueberry Electrolyte Mocktail

This healthy strawberry blueberry electrolyte mocktail combines strawberries, blueberries, coconut water, and blue spirulina for a naturally hydrating red, white, and blue drink. Perfect for barbecues, pool parties, and summer celebrations.

Ingredients

  • 6 frozen strawberries
  • 1/2 cup coconut water for red layer
  • 1/4 tsp blue spirulina
  • 1/4 cup frozen blueberries , I love using wild blueberries
  • 1/2 cup coconut water for blue layer
  • pinch celtic sea salt
  • 3/4 cup coconut water for white layer

Instructions

Make the Red Layer

  • Add the frozen strawberries and ¾ cup coconut water to a blender and blend until smooth. Divide between two glasses.

Create the White Layer

  • Fill each glass with ice. Pour coconut water over the ice until the glass is about two-thirds full.

Make the Blue Layer

  • Add blueberries, coconut water, and blue spirulina to the blender and blend until smooth. Fill the remainder of each glass.

Serve

  • Add a tiny pinch of Celtic sea salt if desired. Serve immediately.

  • If you want to keep the layers separate, very slowly pour the blue mixture over the back of a spoon against the wall of the cup and do not swirl. This helps the blue layer float on top instead of mixing into the coconut water layer.

Notes

This mocktail is best enjoyed immediately after making it.
If needed, the red and blue fruit mixtures can be blended separately and stored in airtight containers in the refrigerator for up to 24 hours. Assemble the drink right before serving.
