How to Make Pumpkin Rice Krispie Treats
Time needed: 40 minutes
- Melt the Butter
In a large pot over medium heat, melt 5 tablespoons butter.
- Add the Marshmallows
Add 5 cups mini marshmallows and stir continuously until melted. TIP: Coat the spoon in shortening or butter to make mixing a breeze without all the stickiness
- Add Cereal
Fold in 5 cups of Rice Krispies cereal until coated in the marshmallow mixture.
- Make the Mini Crusts
Spray muffin tin with cooking spray. Using 1/4 cup measuring cup, scoop the Rice Krispie mixture and press it into each of the muffin cavities. Shape it with your hands to form a mini crust. Set aside as you make the filling.
- Melt Butter for Filling
In the same large pot, melt 3 tablespoons butter over low heat.
- Add the Pumpkin Spice and Puree
Add the pumpkin puree and pumpkin pie spice and stir until fully incorporated.
- Add Marshmallows
Add 3 cups mini marshmallows and stir continuously until melted.
- Optional: Add Food Coloring
Stir in 2 drops of orange food coloring. Adjust as necessary to get the color you would like.
- Add Remaining Cereal
Fold in the remaining rice krispies cereal until coated in the mixture.
- Add Filling
Add 2-3 tablespoons of the filling into the center of each mini crust and press it in gently so that it sticks together. Allow the treats to cool and firm up for about 20 minutes before serving. Top with whipped cream if desired.
