How to Make Healthy Gingerbread Energy Bites
Time needed: 1 hour and 25 minutes
- Line Baking Tray
Line a baking tray with parchment paper.
- Blend the gingerbread dough
Add the energy bite ingredients to a food processor and blend until a soft dough forms. If you are using oats instead of oat flour, add the oats first and pulse until it resembles a fine flour texture. If the mixture is too dry, add milk as needed until the dough holds together.
- Roll into energy bite balls
Scoop and roll into 12–14 smooth gingerbread energy bite balls and place on your parchment-lined tray to set. I used a tablespoon to scoop them out the same size.
- Chill
Refrigerate for 20-30 minutes to firm up.
- Melt the white chocolate
Melt white chocolate in 20–30 second microwave bursts until smooth or by using the double boiler method.
- Dip the gingerbread energy bites
Using 2 forks, dip each chilled bite into the melted white chocolate, let excess drip off, and place back on parchment. Add crushed gingerbread cookie topping if using.
- Chill to set
Refrigerate for 1–2 hours, or until the chocolate has hardened. Store in the fridge for up to 10 days or in the freezer for up to 3 months.

Ingredients
- 1 cup oat flour or oats pulsed to flour texture
- ½ cup cashew butter or almond butter or sunflower seed butter for nut-free
- ⅓ cup soft medjool dates about 4, pitted & packed
- 1 tbsp molasses
- 1 tbsp maple syrup
- 1 tsp cinnamon
- ½ tsp ground ginger
- ⅛ tsp nutmeg
- Pinch of salt
- 2 tbsp milk of choice I used oat milk
For Dipping
- 1 cup white chocolate chips regular or dairy-free, I used Camino Vegan White Chocolate Baking Chips
Optional Toppings
- Crushed gingerbread cookies
Instructions
Blend the gingerbread dough
- Add all energy bite ingredients to a food processor and blend until a soft dough forms. If using oats instead of oat flour, pulde to a flour texture first before adding remaining ingredients. Add more milk as needed until the dough holds together.
Roll into energy bite balls
- Scoop and roll into 12–14 smooth gingerbread energy bite balls. Place on a parchment-lined tray and refrigerate for 20 minutes to firm up.
Melt the white chocolate and Coat Energy Bites
- Melt white chocolate in 20–30 second microwave bursts until smooth. or by using the double boiler method. Then, using 2 forks or a skewer, dip each chilled bite into the melted white chocolate, let excess drip off, and place back on parchment. Add crushed gingerbread cookie topping if using.
Set
- Refrigerate again 1-2 hours until the coating is firm.
