  • 1 tbsp molasses
  • 1 tbsp maple syrup
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • ⅛ tsp nutmeg
  • Pinch of salt
  • 2 tbsp milk of choice (I used oat milk)
  • 1 cup white chocolate chips (regular or dairy-free) I used Camino Vegan White Chocolate Baking Chips
  • Crushed gingerbread cookies for topping, gluten-free if needed, optional

How to Make Healthy Gingerbread Energy Bites

Time needed: 1 hour and 25 minutes

  1. Line Baking Tray

  2. Blend the gingerbread dough

    Add the energy bite ingredients to a food processor and blend until a soft dough forms. If you are using oats instead of oat flour, add the oats first and pulse until it resembles a fine flour texture. If the mixture is too dry, add milk as needed until the dough holds together.   3. Roll into energy bite balls

    Refrigerate for 20-30 minutes to firm up.

  5. Melt the white chocolate

    Melt white chocolate in 20–30 second microwave bursts until smooth or by using the double boiler method.
