Healthy Gingerbread Energy Bites (No Bake White Chocolate Truffles)

These Healthy Gingerbread Energy Bites are soft, rich, and full of warm seasonal spices. Made with oats, dates, nut butter, and dipped in white chocolate, they double as festive gingerbread truffles for Christmas trays, gifting, or an easy holiday snack.

Equipment

  • 1 Food Processor

Ingredients

  • 1 cup oat flour or oats pulsed to flour texture
  • ½ cup cashew butter or almond butter or sunflower seed butter for nut-free
  • cup soft medjool dates about 4, pitted & packed
  • 1 tbsp molasses
  • 1 tbsp maple syrup
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • tsp nutmeg
  • Pinch of salt
  • 2 tbsp milk of choice I used oat milk

For Dipping

  • 1 cup white chocolate chips regular or dairy-free, I used Camino Vegan White Chocolate Baking Chips

Optional Toppings

  • Crushed gingerbread cookies

Instructions

Blend the gingerbread dough

  • Add all energy bite ingredients to a food processor and blend until a soft dough forms. If using oats instead of oat flour, pulde to a flour texture first before adding remaining ingredients. Add more milk as needed until the dough holds together.

Roll into energy bite balls

  • Scoop and roll into 12–14 smooth gingerbread energy bite balls. Place on a parchment-lined tray and refrigerate for 20 minutes to firm up.

Melt the white chocolate and Coat Energy Bites

  • Melt white chocolate in 20–30 second microwave bursts until smooth. or by using the double boiler method. Then, using 2 forks or a skewer, dip each chilled bite into the melted white chocolate, let excess drip off, and place back on parchment. Add crushed gingerbread cookie topping if using.

Set

  • Refrigerate again 1-2 hours until the coating is firm.
