How to Make Strawberry Cheesecake Stuffed Chocolate Covered Dates

Using a small blender or grinder, blend the freeze-dried strawberries into a fine powder.
- Prepare the dates
Slice each Medjool date lengthwise and remove the pit.
Be careful not to cut all the way through — you want the date to open like a pocket so that you can stuff it. - Make the strawberry cheesecake filling
In a medium bowl, add the softened cream cheese, Greek yogurt, maple syrup, and freeze-dried strawberry powder. Mix until smooth and creamy.
Fold in the finely chopped fresh strawberries. Set the filling aside. - Stuff the Dates
If you have a piping bag on hand, you can use a piping bag or small freezer bag with a corner cut out. Otherwise, use a small spoon to fill each date with the strawberry cheesecake filling.
