How to Make Baileys Chocolate Protein Truffles
Time needed: 40 minutes
- Add everything (except cacao nibs) into a food processor.
Almond flour, oats, protein powder, cocoa powder, salt, almond butter, Baileys, maple syrup, and vanilla
- Blend
Blend for about 1 minute until it turns into a thick dough. I like to use the dough setting on my food processor when making truffles.
Check the texture: If it’s too dry → add 1 teaspoon Baileys or milk. If it’s too sticky → add 1 tablespoon almond flour - Fold in Cacao Nibs
Stir in the cacao nibs (or chocolate chips).
- Scoop and roll into balls:
I used a tablespoon to make 12 big ones, but you could use a 1/2 tablespoon to make 24 small ones.
- Roll in cocoa powder
Roll in cocoa powder if you want that classic truffle look.
- Chill
Put them in the fridge for 20–30 minutes to firm up and enjoy!
