Baileys Chocolate Protein Truffles (Easy No-Bake Recipe)

Fudgy, no-bake Baileys chocolate protein truffles made with simple, wholesome ingredients and a hint of Irish cream. These easy chocolate truffles are naturally sweetened, high in protein, and perfect for St. Patrick’s Day or anytime you want a quick homemade treat.

Equipment

  • 1 Food Processor
  • Mixing Bowl

Ingredients

  • 1/2 cup almond flour
  • 1 cup finely ground oats or oat flour
  • ¼ cup chocolate protein powder
  • 3 tablespoons cocoa powder separated. 2 tablespoons for recipe, 1 tablespoon for rolling.
  • ¼ teaspoon sea salt
  • ¼ cup natural almond butter or cashew butter
  • 3 tablespoons Baileys Irish Cream
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons cacao nibs or mini dark chocolate chips

Instructions

Add to Food Processor

  • Add Almond flour, oats, protein powder, cocoa powder, salt, almond butter, Baileys, maple syrup, and vanilla (everything except cacao nibs) into a food processor.

Blend

  • Blend for about 1 minute until it turns into a thick dough. I like to use the dough setting on my food processor when making truffles. Check the texture: If it’s too dry → add 1 teaspoon Baileys or milk. If it’s too sticky → add 1 tablespoon almond flour.

Fold in Cacao Nibs

  • Stir in the cacao nibs (or chocolate chips).

Scoop and roll into balls:

  • I used a tablespoon to make 12 big ones, but you could use a 1/2 tablespoon to make 24 small ones.

Roll in cocoa powder

  • Roll in cocoa powder if you want that classic truffle look.

Chill

  • Put them in the fridge for 20–30 minutes to firm up and enjoy!

Notes

If the dough is too dry, add Baileys or milk 1 teaspoon at a time
If too sticky, add a bit more almond flour
Chill before rolling for easier shaping
Use a cookie scoop for even-sized truffles
Roll in cocoa powder right before serving for best appearance
