Instructions
Add the watermelon cubes, lime slices, and mint leaves to a sturdy glass or cocktail shaker and mix gently with a muddler or the back of a wooden spoon until the watermelon releases its juice and the mint is fragrant (about 10–15 seconds).
½ cup fresh watermelon, 3 slices lime, 5 –6 fresh mint leaves
Add a handful of ice (I like to use my mint ice cubes in this recipe), coconut water, apple cider vinegar, and sea salt. Stir well. Top with sparkling water.

Garnish with extra mint, lime, and a watermelon wedge. Serve immediately while cold and bubbly.

Notes
Use really ripe, sweet watermelon — it makes a big difference.
Frozen watermelon cubes instead of ice give you even more flavor and a thicker, slushy texture.
