Watermelon Mint Mojito Mocktail (Naturally Sweetened & Hydrating)

A fresh, hydrating Watermelon Mint Mojito Mocktail made with real fruit and mint. Naturally sweetened, lightly sparkling, and ready in minutes.

Equipment

  • 1 Muddler or wooden spoon
  • 1 Tall Glass collins or highballer
  • 1 Mixing Spoon

Ingredients

  • ½ cup fresh watermelon cubed
  • 3 slices lime plus more for garnish
  • 5 –6 fresh mint leaves
  • 1 oz coconut water
  • 1 oz lime sparkling water or watermelon sparkling water
  • ¼ –½ tsp apple cider vinegar
  • Tiny pinch of sea salt
  • Ice

Optional Garnishes

  • Fresh mint sprig
  • Lime slice
  • Small watermelon wedge

Instructions

  • Add the watermelon cubes, lime slices, and mint leaves to a sturdy glass or cocktail shaker and mix gently with a muddler or the back of a wooden spoon until the watermelon releases its juice and the mint is fragrant (about 10–15 seconds).
    ½ cup fresh watermelon, 3 slices lime, 5 –6 fresh mint leaves

  • Add a handful of ice (I like to use my mint ice cubes in this recipe), coconut water, apple cider vinegar, and sea salt. Stir well. Top with sparkling water.

  • Garnish with extra mint, lime, and a watermelon wedge. Serve immediately while cold and bubbly.

Notes

  • Use really ripe, sweet watermelon — it makes a big difference.
    • Frozen watermelon cubes instead of ice give you even more flavor and a thicker, slushy texture.
  • Want it a little sweeter? Add a tablespoon of your favorite liquid sweetner.
